This dairy pig flavored with myrtle, thyme, bay leaves and other Mediterranean spices, is the flagship of Sardinian cuisine and one of the best Made in Italy gastronomic products. The renowned pork is rigorously cooked on the grill, following the rules of tradition scrupulously. This dish is accompanied by vegetable crudité. To close they can not miss the seadas, the typical Sardinian sweets.

The seadas are typical Sardinian sweets, of Spanish origin, made with semolina, fresh sour cheese, honey or sugar as a condiment. The dairy ingredient, at the base of the seadas, derives from the activity linked to pastoralism that distinguishes Sardinia.The original recipe includes the use of pecorino cheese, but the preparation of seadas also admits the cow’s cheese. The seada should be consumed fresh, and its tasting is accompanied by sweet and aromatic wines typical of the area.

A typical Galluran stone house, situated in the Piazza della Chiesa, San Pantaleo which Gianni Giagoni has transformed with passion and love into an ideal location where good cuisine meets lively emotion. This private little Eden inspires an atmosphere in which to savour the pleasures of well-being in an exclusive yet informal setting. The art of hospitality, in the internal garden under the open sky, in the terrace on the Piazza facing the rural church and in the refined internal hall with its fireplace and where the internal décor and architecture marry with the nature of the original design. Founded on culture and sensitivity thanks to wide experience which began in San Pantaleo and continued abroad in some of the best restaurants to discover and maximise the expression in the country of origin, the little treasure that lies between the granite rocks and the sea.

Since 1973 Gianni Pedrinelli has fed and  entertained the jet set of the Emerald Coast.

It was almost 40 years ago when the young “Bresciano” left his hometown location to open his first restaurant on the Emerald coast together with his Sister Clara and Brother Renato.

Engaged by the beauty of Gallura, the aromatics scents and the unspoiled territory, they brought to Sardinia not only their luggage but also the Gastronomic knowledge of their cuisine which they like to call “homey”, long transmitted from their Parents, the peasant flavors of their native town and the sophisticated ones of their new home.
A cuisine made only with the freshest and seasonal products full of Gallura perfumes and Emerald Sea. Clara is the decisive chef whose art pleases and satisfies the guests with the flavors and simplicity of the best raw materials that the Island has to offer.

The Appetizer buffet is a must, with hors d ‘oeuvre which are the happiest expression of the fresh ingredients.
The Vanilla ice cream “Home Made” and richly delicious is the final touch to which no one can resist.

Gianni Pedrinelliis open from March to October, it sits on the shoulder of the Golfo del Pevero where the emerald of the water meet the beautiful sandy beach of Pevero.
A large stone fireplace overlooks the spacious indoor dining room and offers a variety of selected art pieces including a permanent art show of local and internationally known artists.
The restaurant also offers a smaller dinning room for up to 50 people.

During the summer season the dinning is offered on the terraces overlooking the garden where candle lights, moon shadow and flowing curtains will help the magic experience to enhance the night.

The world of gastronomy has always fascinated Chef Franco Tonelli. This is why he decided to make out of his passion a career, and ended as Chef de Cuisine in one of the most famous restaurants in Sardinia, Il Pescatore.
He gained experience moving from prestigious hotels to another, such as Hotel Hermitage in Elba, Il Baglioni Resort in Grosseto and Hotel Cortina, Ancora and Victoria in Cortina until he arrived in Sardinia, first at Hotel Cala di Volpe, and since recently at the helm of Il Pescatore’s kitchen.

 

Chef Franco Tonelli’s kitchen respects traditions, applying simple cooking methods without manipulating the product too much. This is his recipe of success, the less products are changed in their flavors, the more harmony between the single elements can be achieved.

Two dishes one has to try while being in Sardinia according to the chef are Maccheroni alla Chitarra with saffron lobster as well as Fish Mezze Lune with fresh Peretta cheese, containing his favorite ingredients, saffron and herbs.
